Sticky Date Donuts 

Dairy Free, Gluten Free, Nut Free, Vegan

Ingredients

Donuts

25 g (1 oz) chia seeds

180 g (6½ oz) dried dates, pitted and roughly chopped

½ teaspoon bicarbonate of soda (baking soda)

300 ml (10 fl oz) boiling water

150 g (5½ oz) gluten-free plain (all-purpose) flour

1¼ teaspoon baking powder

1 teaspoon ground cinnamon

60 g (2 oz) tinned coconut cream

1 teaspoon vanilla

175 g (6 oz) coconut sugar

 

Sauce

30 g (1 oz) coconut oil

120 g (4½ oz) coconut sugar

260 g (9 oz) tinned coconut cream

2 teaspoons cornflour (cornstarch)

½ teaspoon ground sea salt

1 teaspoon vanilla extract

 

Topping

60 g (2 oz) dried dates, pitted and roughly chopped
