Tomorrow is the start of London Coffee Festival but although we love nothing more than a good cup of Joe, we also REALLY love cake here at Hardie Grant. What better way to combine two of our great loves than in a delicious Glazed Coffee Cake care of Margaret Fulton’s Baking Classic.


Glazed Coffee Cake

Makes 2 cakes; Serves 16

You will need...

185 g unsalted butter, softened

3/4 cup (165g) caster sugar

2 eggs

2 cups (300 g) plain flour

1 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

1/4 teaspoon salt

1 cup (250 g) light sour cream

2 tablespoons extra strong espresso coffee

For the coffee glaze

1 cup (160 g) icing sugar, sifted

1–2 tablespoons strong espresso coffee
